Walking Taco Casserole

All the fun of a walking taco, now in a cheesy, layered casserole! Crunchy Fritos, seasoned beef, melty cheese, and all your favorite taco toppings come together in one easy, crowd-pleasing dish. Perfect for game day, weeknight dinners, or anytime you’re craving taco night with zero fuss!

Cook Time: 30 minutes
Ingredients:
1.5 lbs ground beef
½ yellow onion, finely chopped
¼ cup water
1–2 tsp taco seasoning
1 small can green chiles
1 can enchilada sauce
1 cup shredded cheese (cheddar or Mexican blend)
10–12 mini corn tortilla shells
½ bag Fritos (regular or chili cheese)
Optional toppings: shredded lettuce, chopped tomatoes, sour cream, salsa, cotija cheese
Instructions:
Preheat the oven to 350°F
In a skillet over medium heat, cook the ground beef and chopped onion until the beef is browned and cooked through. Drain excess grease.
Add water and taco seasoning to the cooked beef. Stir in green chiles, enchilada sauce, and cream cheese (if using) until well combined.
Line the bottom of a 9x13-inch baking dish with a layer of mini corn tortillas. Spread half of the meat mixture over the tortillas. Add another layer of tortillas, then the remaining meat mixture.
Sprinkle the top with Fritos and shredded cheese. Bake uncovered at 350°F for 20 minutes, until the cheese is melted and bubbly.
Remove from oven and let cool slightly. Serve with optional toppings such as shredded lettuce, chopped tomatoes, sour cream, salsa, and cotija cheese.
