Lemon Crinkle Cookies

Ingredients:
2 cups flour
1 tsp baking soda
1/4 tsp salt
1 cup sugar
1/2 cup (1 stick) butter
1 egg
1/2 tsp vanilla extract
5-8 drops of yellow food coloring
2 tbsp fresh lemon juice
*I think it gives a better lemon flavor if you also add some lemon oil (I buy mine from Hobby Lobby baking aisle).
For rolling dough in:
1/4 cup sugar
1/2 cup powdered sugar
Combine the flour, baking soda, and salt in a large mixing bowl.
In a separate bowl, cream your butter and sugar together using a hand mixer.
Add your egg, vanilla, lemon juice/oil, and food coloring to the same bowl and continue mixing.
Add your dry ingredients in with the wet ingredients and continue mixing.
Refrigerate dough for 30-60 mins.
When ready to bake, preheat oven to 350°.
Use a small cookie dough scoop to get the dough into small dough balls, roll each ball in the sugar and then the powdered sugar.
Place on a lined baking sheet and bake at 350° for 10-12 minutes.
Allow them to cool for 5 mins and enjoy!
