Momma’s Fried Rice

My mom always makes this fried rice and it’s so good; we always crave it. Plus it’s just as good reheated, so a great recipe for meal/lunch prepping.

30 min cook time


Ingredients:

3 cups of white rice

2 stalks of celery

1 bunch of green onion

3 eggs

1/2 cup soy sauce

1/2 pound of bacon (unless you want more protein then a pound)

 
  1. Cook bacon in pan over medium-high heat. Remove from pan when done.

  2. Chop the celery and onion and add to the same pan used for the bacon to simmer.

  3. In a separate pan over medium heat, scramble the eggs and add to celery/onion pan when done.

  4. Cook rice according to box/bag instructions. Add rice to other pan when done cooking.

  5. Crumble up the bacon and add to pan with rest of ingredients.

  6. Add soy sauce to pan and let everything simmer together for 15-20 minutes.

Enjoy with some egg rolls, pork chops, or by itself! - Jess
