Servings: 6
Prep Time: 15 minutes
Cook Time: 20 minutes
Ingredients:
1 lb Ground Beef
8 oz Lo Mein Noodles (linguine or spaghetti can be used as a substitute)
1 ½ cups Steamed Broccoli, chopped
1 cup Beef Broth, divided
1 Tbsp Minced Garlic
1 Tbsp Sesame Oil
1 Tsp Chili Paste (adjust to taste)
½ cup Low-Sodium Soy Sauce
¼ cup Light Brown Sugar
¼ cup Hoisin Sauce
2 Tbsp Cornstarch
1 bunch Green Onions, sliced (reserve some for garnish)
¼–½ tsp Red Pepper Flakes (optional, adjust to heat preference)
Instructions:
Cook the Noodles
Cook rice noodles according to package directions. Drain, rinse with cold water, and set aside.
Brown the Beef
In a large skillet or wok, heat sesame oil over medium-high heat. Add ground beef and cook until browned. Stir in minced garlic and cook for an additional 1–2 minutes until fragrant.
Make the Sauce
Add soy sauce, hoisin sauce, brown sugar, chili paste, and ½ cup of beef broth to the beef. Stir to combine.
Thicken the Sauce
In a small bowl, whisk the remaining ½ cup of beef broth with cornstarch until smooth. Pour into the skillet and stir to combine. Add red pepper flakes if desired. Cook for 1–2 minutes until the sauce thickens slightly.
Add Veggies
Stir in chopped broccoli and ¼–½ cup of sliced green onions. Cook for 3–5 minutes on medium heat, allowing the broccoli to absorb the sauce flavor.
Combine with Noodles
Add cooked noodles to the skillet. Toss until the noodles are evenly coated with the sauce and heated through.
Serve
Garnish with additional green onions and serve immediately.
