Servings: 24 cookies
Total cook time: 20-30 mins
Ingredients:
1 cup butter
1 egg
1/2 cup white sugar
1/2 cup brown sugar
1/2 tsp vanilla extract
1/4 cup Bailey’s Irish Cream
1/4 cup cocoa powder
2 1/2 cups flour
1 tsp baking soda
1 tsp cornstarch
2 cups white chocolate chips
Preheat oven to 350°
In a bowl, cream together butter and sugars. Then add egg, vanilla, and Bailey’s.
Stir in dry ingredients until mixed into a dough consistency.
Form dough into balls, place on cookie sheet, and press down in dough balls to flatten them. ***they won’t expand much so you can make the dough balls about the size that you want the cookies to turn out.
Bake at 350° for 10-12 minutes. Remove from oven and let cool.
While cookies are cooling - put white chocolate chips in a microwave safe bowl and microwave in 30 second increments, stirring in between. Do this until chocolate is fully melted (probably 4-5 times).
Once cookies are cooled and chocolate is melted, dip cookies in the melted chocolate so they are halfway covered and set in parchment paper to cool once again.
Add sprinkles of your choice while chocolate is still warm. **I usually do Christmas colored sprinkles or chocolate sprinkles if I’m not making them for the holidays.
