Ingredients:
1 lb medium-large shrimp (deveined/no tail)
3-5 tbsp cornstarch
1 cup vegetable oil (if frying on stove)
2 cups rice
2 cups shredded cabbage or lettuce
2 medium tomatoes
1 bunch green onions
Salt & pepper
Bang Bang sauce:
1/4 cup Mayo
2-3 tbsp Sriracha (depends on your spice comfort level)
1 tbsp rice vinegar
2 tbsp sugar
Whisk together bang bang sauce ingredients and place in fridge.
Cook rice by box instructions.
Rinse shrimp and pat dry. Coat shrimp with corn starch and salt & pepper.
If frying on the stove, heat the vegetable oil over medium heat. Add shrimp to oil and cook for 3-4 minutes, flipping halfway through. **The other option is coating the shrimp in corn starch, salt & pepper, and put in the air fryer at 400° for 5-6 minutes.
Cut up tomatoes, green onion, and cabbage/lettuce.
Toss cooked shrimp in bang bang sauce.
Put a scoop of rice in a bowl & top with bang bang shrimp, cabbage, tomatoes, and green onion.
Drizzle top with extra sauce if desired.
