Ingredients:
12 oz andouille sausage
12-16 oz cooked, deveined shrimp
**you can use 1 lb of chicken breast instead of the shrimp, or both if you want.
1 red bell pepper
1 green bell pepper
1 yellow onion
2 celery ribs
4 garlic cloves
1 1/2 cups chicken broth
1- 28oz can diced tomatoes
2 1/2 tbsp tomato paste
2 tsp Cajun or Creole seasoning
2 tsp Italian seasoning
1 tsp paprika
1/2-1 tsp cayenne pepper (depending on your preferred spice level)
1 fresh bay leaf
4 cups cooked rice
Chop up all vegetables and place in crockpot. Then add all remaining ingredients, except rice. (Remove tails from shrimp if still on).
Cook on LOW for 3-4 hours.
Cook rice according to package instructions and then add to crockpot.
Mix everything together and cook on low for an additional 30 mins if needed.
