Crockpot Jambalaya

8 servings

4.5 hour cook time


Ingredients:

12 oz andouille sausage

12-16 oz cooked, deveined shrimp

**you can use 1 lb of chicken breast instead of the shrimp, or both if you want.

1 red bell pepper

1 green bell pepper

1 yellow onion

2 celery ribs

4 garlic cloves

1 1/2 cups chicken broth

1- 28oz can diced tomatoes

2 1/2 tbsp tomato paste

2 tsp Cajun or Creole seasoning

2 tsp Italian seasoning

1 tsp paprika

1/2-1 tsp cayenne pepper (depending on your preferred spice level)

1 fresh bay leaf

4 cups cooked rice

 
  1. Chop up all vegetables and place in crockpot. Then add all remaining ingredients, except rice. (Remove tails from shrimp if still on).

  2. Cook on LOW for 3-4 hours.

  3. Cook rice according to package instructions and then add to crockpot.

  4. Mix everything together and cook on low for an additional 30 mins if needed.
