Crockpot Queso Chicken Tacos

Ingredients:

2lbs of Boneless Skinless Chicken Breasts

1 (10oz) Can of Rotel - Can Use Mild or Hot

1 Packet of Taco Seasoning

1 (15oz) Jar of Tostitos Salsa Con Queso


Instructions:

Place your chicken in your crockpot. Add your taco seasoning and your can of Rotel. Cook on low for 4-6 hours or until your chicken is cooked all the way through. (It should shred easily)


Once the chicken is done cooking, shred the chicken and then add your salsa con queso to the crockpot. Mix until combined. I then let this cook for another 10-15 minutes or until the queso is warmed up.


Serve on tortilla shells with the toppings of your choosing. I used sour cream, lettuce, and taco sauce. This would also be good on a walking taco or a rice bowl.

Notes: If you feel like you have a lot of liquid after the chicken is done cooking you can drain some of that off before adding the queso in.
