Crockpot Queso Chicken Tacos

Cheesy, creamy, and full of flavor, these Crockpot Queso Chicken Tacos are the ultimate easy dinner. Simply cook chicken with taco seasoning and Rotel, shred it, stir in salsa con queso, and you are ready to serve. Perfect for tacos, nachos, or rice bowls and ready in under six hours with minimal effort.


Servings: 6–8

Total Time: About 4–6 hours 15 minutes


Ingredients:

2 lbs boneless, skinless chicken breasts

1 (10 oz) can Rotel (mild or hot)

1 packet taco seasoning

1 (15 oz) jar Tostitos Salsa Con Queso


Optional for Serving:

Tortillas, sour cream, shredded lettuce, taco sauce, shredded cheese, cilantro, etc.


Instructions:

Place the chicken breasts in the bottom of your crockpot. Sprinkle taco seasoning evenly over the top. Pour the entire can of Rotel (do not drain) over the chicken.


Cover and cook on low for 4–6 hours, or until the chicken is fully cooked and shreds easily with a fork (internal temperature 165°F).


Once cooked, shred the chicken directly in the crockpot using two forks.

If there is excess liquid, carefully drain some off before adding the queso.


Add the entire jar of salsa con queso and stir until well combined. Cover and cook an additional 10–15 minutes, or until the queso is fully melted and heated through.


Spoon the queso chicken into warm tortillas and add your favorite toppings.

This mixture also works great for walking tacos, nachos, quesadillas, or rice bowls.
