Crockpot Spinach Artichoke Dip

Serving Size 10


Ingredients:

4 Cups Freshly Shredded Parmesan Cheese (Packaged can be extra salty)

10oz Frozen Spinach (steamed and remove all of the excess water / Read Tips Below)

14oz Artichoke Hearts Drained and Chopped

4 Tsps of Minced Garlic

16 oz of Cream Cheese

2/3 Cup Mayonnaise

1 1/3 Cup of Sour Cream


Instructions:


Pour all of the ingredients into a slow cooker and cook on high for 1-2 hours or low for 3-4 hours. Stir frequently while everything is melting.


Serve with chips, bread, or pita bread. Enjoy :)


Spinach tips:

To get rid of excess moisture you can place the spinach (in batches) in a potato ricer and squeeze until dry. If you don't have a potato ricer - I just squeezed out the spinach in some paper towels. It's messy, but it gets the job done. If you leave in the extra water, the dip can turn green and be runny.
