This is one of my favorite cookie recipes to make for the holidays! It’s like a brownie cookie with a hot cocoa twist, which you’re sure to love!
36 servings
1 hour cook time
Ingredients
For cookies:
1/2 cup butter
12 oz chocolate chips
1 1/2 cups brown sugar
3 eggs
2 tsp vanilla extract
1 1/2 cups flour
1/2 cup unsweetened cocoa powder
1/2 tsp salt
Mini marshmallows
Sprinkles or crushed peppermint (optional toppings)
For chocolate glaze:
4 tbsp butter
1/4 cup cocoa powder
1/4 cup hot water
2 cups powdered sugar
1 tsp vanilla extract
For cookies- Melt butter and chocolate chips in microwave in 20 second increments, stirring in between, until mixture is a smooth chocolate sauce. Set aside.
In a separate bowl, use hand mixer to mix eggs, brown sugar, and vanilla extract. Combine this with the chocolate mixture.
In a separate bowl, stir together flour, salt, and cocoa powder.
Slowly mix dry ingredients in with wet ingredients.
Once dough is combined, let cool in the fridge for 30 mins.
Remove dough from fridge and preheat oven to 350°
Line cookie sheets with parchment paper and form dough into tablespoon-sized balls.
Bake cookies at 350° for 10 mins.
Remove cookies from oven and add 2-3 mini marshmallows to the top of each cookie. Place back in the oven for 3 minutes.
For glaze- Melt the butter and combine with water and vanilla extract.
Slowly whisk in powdered sugar.
Once cookies are finished baking, drizzle each with chocolate glaze and top with sprinkles. (For some of the cookies, I’ll make without marshmallows and just sprinkle with the crushed peppermint instead).
Let cool and enjoy!
