Ingredients:
1 1/2 lb chuck roast or flank steak
3/4 cup beef broth
1/2 cup soy sauce
1/3 cup brown sugar
1 lb broccoli (I use fresh but you could use frozen instead)
2 tbsp sesame oil (you could switch this out with another oil but sesame oil does a really good job of bringing out all the flavors)
3 tbsp cornstarch
3 tbsp water
3 garlic cloves or 3 tsp minced garlic
Olive oil
Salt & pepper
Minute Rice (optional)
First step is to brown the beef. If you like the sauté method on the instant pot, you can do it that way. I prefer to just brown it on the stove with some olive oil, salt & pepper.
While beef is browning, add beef broth, sesame oil, soy sauce, minced garlic, and brown sugar to instant pot. Mix until sugar is dissolved.
If beef was browned on stove, add to the instant pot.
Cook at high pressure for 10 mins.
Do the quick release, add broccoli, then cook at high pressure for 2 more mins.
Quick release. Mix water and cornstarch in a small bowl and then add mixture to instant pot. Stir until thickened.
Serve with minute rice or other side.
