Here’s a quick, healthy, and pretty versatile recipe that you’re sure to love!

Ingredients:
4 bell peppers
1 lb lean ground beef (or Italian sausage)
1 large tomato
1/2 yellow onion
1 garlic clove or 1 tsp minced garlic
1 1/4 cup marinara sauce of your choice
1 1/2 tsp Italian seasoning
1 tsp red pepper flakes (if you want a little spice)
1/2 tsp garlic powder
1 cup shredded mozzarella cheese
Salt & pepper
Parsley or fresh basil for topping (optional)
Preheat oven roasted 400°
Cut off tops of bell peppers, remove seeds, and half each pepper.
Season peppers with salt, pepper, and garlic powder and place on a baking sheet.
Bake for 15-20 minutes.
While peppers are baking, brown hamburger/sausage in a pan over medium heat.
Add onion and tomatoes and cook for about 5 more minutes.
Add Italian seasoning, red pepper flakes, garlic, and marinara.
Once peppers are done baking, place them in a baking dish and add meat mixture to each pepper.
Top with mozzarella cheese and bake for 15 more minutes.
Sprinkle with parsley or basil (optional) and serve. Enjoy!
**This is a versatile recipe because you can take away and add different things to make it how you like it. I’ve done stuffed peppers with a chicken Alfredo type mixture in them before and that’s also really good! Don't be afraid to make it your own!
