Ingredients:
2 1/4 cups pancake batter of choice
1 1/3 cups water
1 lb breakfast sausage
4 eggs
2/3 cup shredded cheese
1/4 cup maple syrup
Salt & pepper
Preheat your oven to 400°
In a medium sized bowl combine your pancake mix, water, syrup, and shredded cheese.
Brown your sausage on the stove over medium heat. Set to the side when finished.
Next, scramble your eggs in a pan over medium heat.
When both sausage and eggs are done, add them to your bowl with the pancake mixture. Sprinkle with some salt & pepper.
Stir everything together then grease a muffin pan with some non-stick spray.
Scoop a 1/4 cup of the mixture into each muffin tin.
Bake at 400° for 15 minutes & enjoy!
