Lemon Bars

Ingredients:

Crust -

1 cup (2 sticks) butter

1/2 cup sugar

2 cups flour


Filling -

1 1/2 cups sugar

1/4 cup flour

4 eggs

2/3 cup fresh lemon juice


 
  1. Preheat oven to 350°

  2. In a medium bowl, melt your butter & then whisk together the butter, sugar, and flour for the crust.

  3. Spray a 9x13 pan with non-stick spray or line with parchment paper.

  4. Spread crust out evenly in the bottom of the pan. Bake at 350° for 15 mins.

  5. While the crust is baking, mix all lemon filling ingredients evenly in a bowl.

  6. Pour lemon mixture over the top of the crust & bake at 350° for another 20 mins.

  7. The bars should look white-ish yellow in color and the top should not jiggle.

  8. Cool in the fridge for at least 2 hours & then top with powdered sugar.

  9. Cut into squares & enjoy!
