Olive Garden Alfredo Pasta (copycat recipe)

Serving Size: 6

Cook Time: 20 Minutes

Ingredients:

6 Tablespoons Unsalted Butter

1 Tablespoon of Minced Garlic

2 Tablespoons of All-Purpose Flour

1 1/2 Cups of Whole Milk

1 1/2 Cups of Heavy Whipping Cream

1/2 Cup Grated Romano Cheese

1/2 Cup Grated Parmesan Cheese

(Extra grated parm for topping pasta)

1lb Fettuccine

Parsley

Salt & Pepper

For Extra Spice: Cayenne Pepper




FYI: If you would like to add meat to your pasta dish. Follow your favorite recipe and top the pasta before adding grated parmesan and parsley.

Instructions:

Make the Fettuccine according to the package directions. While the water is preheating, begin the sauce. (Save about one cup of pasta water for the sauce)


In a saucepan melt the butter over medium heat. Add the minced garlic and cook until fragrant. Usually around one minute.


Whisk in the flour and cook for one minute. (Whisking Continuously) This should create a roux for the sauce.


Add the heavy whipping cream and whole milk while stirring continuously.


Bring to a light boil, and reduce the heat to low. The sauce mixture should continue to thicken.


Slowly stir in your cheese and add salt and pepper to taste. This would also be a good time to add cayenne pepper for some extra spice. Add a little at a time until you get to the heat you are going for.


If you would like your sauce to be a little thinner you can add some of your reserved pasta water until you reach your desired consistency.


Add your noodles to your saucepan and mix until the sauce and the pasta are evenly combined.


Plate your pasta, topping it with grated parmesan and parsley. If you are adding meat to your pasta dish, top your noodles with the meat of your choosing and then add the grated parmesan and parsley.
