One Pot Broccoli Cheese Orzo

Ingredients:
2 Tbsps of Salted Butter
1 Tbsp of Olive Oil
1 Onion (Minced)
1 Tbsp of Minced Garlic
1 Cup of Shredded Carrots
2 Cups of Cooked Chopped Broccoli
1 Cup of Uncooked Orzo
2 Cups of Chicken Broth
1 Cup of Heavy Whipping Cream
1 1/2 Cups of Shredded Sharp Cheddar Cheese (Shred yourself not bag cheese)
1/2 Cup of Shaved Parmesan
Salt & Pepper to Taste
Instructions:
In a large sauté pan, melt the butter with the olive oil over medium heat. Add the diced onion and shredded carrots, and cook for 4–5 minutes, stirring occasionally, until the onions turn translucent and the carrots are tender.
Stir in the minced garlic and cook for 1–2 minutes, just until fragrant. Be careful not to let it brown.
Add the orzo to the pan and stir to coat it in the butter and oil mixture. Pour in 2 cups of chicken broth, stirring well to combine. Once the mixture begins to simmer, cover the pan and cook for 6 minutes on medium-low heat.
Remove the lid and stir the orzo — it should be tender. Add the cheeses, cream, and broccoli, then mix until the cheese has fully melted and the broccoli is heated through.
Season with salt and pepper to taste, give it one last stir, and serve warm.
