One Pot Broccoli Cheese Orzo

Creamy, cheesy, and packed with tender broccoli and sweet carrots, this one-pot orzo is comfort food at its finest. Ready in just 30 minutes, it’s a cozy dinner that’s sure to become a weeknight favorite.

Ingredients
2 tbsp salted butter
1 tbsp olive oil
1 medium onion, minced
1 tbsp minced garlic
1 cup shredded carrots
2 cups cooked, chopped broccoli
1 cup uncooked orzo
2 cups chicken broth (low-sodium recommended)
1 cup heavy cream
1 ½ cups sharp cheddar cheese, freshly shredded
½ cup Parmesan cheese, shaved or grated
Salt and freshly cracked black pepper, to taste
Instructions:
In a large sauté pan or deep skillet, melt the butter with olive oil over medium heat. Add the minced onion and shredded carrots, and cook for 4–5 minutes, stirring occasionally, until onions are translucent and carrots are tender.
Stir in the minced garlic and cook for 1–2 minutes until fragrant, being careful not to let it brown.
Add the uncooked orzo to the pan and stir to coat in the butter and oil mixture for 1–2 minutes. This adds a subtle nutty flavor to the pasta.
Pour in the chicken broth and stir to combine. Bring to a simmer, cover, and cook on medium-low heat for 6–8 minutes, stirring occasionally, until the orzo is tender and most of the liquid is absorbed.
Remove the lid, then stir in the heavy cream, sharp cheddar, Parmesan, and cooked broccoli. Mix until the cheese melts and the broccoli is heated through, creating a rich and creamy sauce.
Taste and season with salt and freshly cracked black pepper. Serve warm and enjoy!
