I’m always looking for new ways to cook my chicken breast, and this is a new favorite!

Ingredients:
4 chicken breasts
2 cups fresh chopped spinach (do not use frozen)
2 tbsp plain Greek yogurt
2 tbsp softened cream cheese
1/4 cup grated Parmesan cheese
1/4 tsp garlic powder
1/4 tsp onion powder
1 tsp salt
1 tsp paprika
1 tbsp olive oil
1/2 tsp minced garlic
1/2 tsp red pepper flakes (optional)
Preheat oven to 375°
In a small bowl mix paprika, salt, onion & garlic powder.
Rinse and pat chicken breasts dry, then gently cut a pocket into each breast along the long side.
Drizzle both sides with olive oil and then coat chicken breasts with seasoning mixture.
In another bowl mix cream cheese, yogurt, garlic, Parmesan cheese, and spinach.
Spoon some of the mixture into the pocket of each chicken breast.
Place stuffed chicken on a baking sheet and cook at 375° for 30 mins.
***Add red pepper flakes to spinach mixture or sprinkle on top of chicken breasts to add a little heat. Enjoy! - Jess
