Sweet & Spicy Crockpot Chicken Tacos

Cook Time: 5 hours

Servings: 4


Ingredients:

1 lb chicken breasts

1-2 cups canned pineapple (depending if you want more sweet or more spicy)

1/2 red onion

1 jalapeño

1 tsp minced garlic

1 tbsp mustard

1 tbsp sriracha

1 tsp cumin

1 tsp chili powder

1 tsp salt

1/4 cup water or leftover pineapple juice

Tortillas of choice and any other taco toppings.


  1. Mixed the chopped onion, jalapeño, garlic, sriracha, mustard, cumin, chili powder, salt, pineapples, and water in a bowl.

  2. Place the chicken breast in your crockpot and top with the pineapple mixture.

  3. Cook on high for 3 hours or low for 5 hours.

  4. Once chicken is fully cooked, remove from crockpot and shred.

  5. Add shredded chicken to your tortillas of choice and add spicy cilantro ranch (optional) and any other toppings you like.


Spicy Cilantro Ranch (optional):

1/2 cup cilantro

1/2 cup sour cream

1 jalapeño

1 clove garlic

2 tbsp green onion

2 tbsp olive oil

1/2 lime, juiced

Salt


  1. Combine all sauce ingredients in a food processor and blend until creamy.

  2. Refrigerate for 30 mins and drizzle over tacos.
