Ingredients:
1 lb ground Italian sausage
1 large red pepper
2 cups zucchini (about 2 medium zucchinis)
2 Roma tomatoes
1/2 yellow onion
6 oz can of tomato paste
12 oz chicken broth
1 cup grated Parmesan cheese
2 garlic cloves (minced)
1 tsp salt
1/2 tsp pepper
1/4-1/2 tsp red pepper flakes
2 tbsp fresh basil (optional but it does add extra flavor)
Brown sausage in a stock pot over medium heat.
While sausage is cooking, chop up red bell pepper and onion.
When sausage is done cooking, add pepper and onion and cook on medium heat for 3-4 more minutes.
Dice up zucchini and tomatoes.
Add all remaining ingredients to stock pot and mix together.
Turn heat to high and let soup come to a small boil.
Cover, turn heat to low, and let simmer for 10-15 minutes.
Top with some extra Parmesan cheese If you wish and enjoy!
