This is my ALL time favorite soup. I make this almost every two weeks! This is a copy-cat version of the famous Olive Garden Zuppa Toscana. Although this one tastes better ;).
Ingredients:
1lbs Italian Sausage
6-8 Strips of Bacon Chopped
1 Large Chopped Onion
2 Cloves of Minced Garlic
2 Cups of Chicken Broth
1 Qt of Water
1 Cup of Heavy Whipping Cream
1 1/2 Cups of Chopped Spinach or Kale
5-6 Large Russet Potatoes Peeled and Cubed Salt & Pepper to Taste

Instructions:
Preheat oven to 425 for the bacon. Spread bacon out on an edged pan with parchment paper on the bottom. (This will help absorb some of the greases) Cook bacon for 20-25 minutes.
Brown the Italian sausage, garlic, and chopped onion together until the sausage is cooked.
Add the cubed potatoes, chicken broth, and water. Cook until the potatoes are soft.
Once the potatoes are soft, add the two cups of spinach, one cup of cream, and diced bacon. Cook for an additional 10 minutes. Add salt and pepper to taste.
Literally, Katherine and I each make this at least once every 2 weeks. We are obsessed!
