Bean Salsa

This fresh and zesty salsa is bursting with color, crunch, and flavor! Sweet corn, crisp peppers, and tender beans tossed in a tangy-sweet vinaigrette make it perfect for scooping with chips.


Servings: 6–8

Prep Time: 15 minutes

Chill Time: 30 minutes (optional for more flavor)


Ingredients:

  • 1/2 cup chopped onion

  • 1 can (15 oz) shoe peg corn, drained

  • 1/2 cup chopped green bell pepper

  • 1/2 cup chopped red bell pepper

  • 1 can (15 oz) black beans, drained and rinsed

  • 1 can (15 oz) pinto beans, drained and rinsed

  • 1/3 cup white vinegar

  • 1/4 cup oil (vegetable or olive)

  • 1/2 tbsp water

  • 1/2 cup sugar

  • Salt and black pepper to taste


Instructions:

  1. Prep the Veggies & Beans: In a large bowl, combine chopped onion, corn, green and red peppers, black beans, and pinto beans.

  2. Make the Dressing: In a separate small bowl, whisk together white vinegar, oil, water, sugar, salt, and black pepper until smooth.

  3. Combine: Pour the dressing over the vegetable and bean mixture and stir until everything is evenly coated.

  4. Chill & Serve: Refrigerate for at least 30 minutes to let the flavors blend. Serve chilled with tortilla chips.
