Bruschetta Chicken

This is one of my go-to low carb dinner recipes. It’s also good as a quick dinner option.

Ingredients:

1 lb chicken breast

5-6 Roma tomatoes

1 cup shredded mozzarella cheese

2 tbsp balsamic vinegar

1 tsp dried oregano or Italian seasoning

Small bunch of fresh basil leaves

Olive oil

Salt & pepper

 
  1. Preheat oven to 375°

  2. Cook chicken in a pan over medium heat with some olive oil. Season with salt, pepper, and Italian seasoning/oregano.

  3. Cut tomatoes into small chunks.

  4. Add cooked chicken to an 8x8 pan/baking dish (I prefer to use glass). Top with tomatoes and then shredded mozzarella cheese.

  5. Drizzle balsamic vinegar over top.

  6. Bake in oven uncovered for 15-20 mins or until cheese is fully melted.

  7. Remove from oven, cut up basil leaves and mix in with chicken.

Serve & enjoy!
