Servings: 4

Prep Time: 10–15 minutes

Cook Time: 12–15 minutes

Total Time: 25–30 minutes

Ingredients:

1 lb ground chicken

½ tbsp oil

1 tbsp minced garlic

1 small onion, diced

⅓ cup hoisin sauce

1 tbsp rice wine vinegar

2 tbsp low-sodium soy sauce

½ tbsp ground ginger (or 1 tbsp fresh for better flavor)

¼ cup diced green onions

1 head butter lettuce (leaves separated)

8 oz water chestnuts, drained and chopped (optional, but adds great crunch)

Dipping Sauce:

¼ cup warm water

2 tbsp granulated sugar

4 tsp rice vinegar

3 tbsp low-sodium soy sauce

1 tsp chili garlic sauce

½ tsp Chinese hot mustard

1 tsp oyster sauce

½ tsp sesame oil

Instructions:

Heat oil in a skillet over medium heat. Add ground chicken, diced onion, and garlic. Cook until chicken is fully browned and cooked through, breaking it up as it cooks.

In a small bowl, whisk together hoisin sauce, rice vinegar, soy sauce, and ginger. Pour over the chicken and stir well to coat. Cook for 2–3 minutes so the sauce thickens slightly and soaks in.

Stir in chopped water chestnuts and green onions. Cook another 2 minutes. Taste and adjust with salt and pepper if needed.

Whisk all dipping sauce ingredients together until sugar is dissolved.

Spoon the chicken mixture into butter lettuce leaves and serve with dipping sauce on the side.

Optional Toppings:

Extra green onions

Sesame seeds

Sriracha or chili flakes for heat
