Ingredients:
1lb of Ground Chicken
1/2 Tbsp. Oil
1 Tbsp. Minced Garlic
1/3 Cup Hoisin Sauce
1 Tbsp. Rice Wine Vinegar
1 Small Diced Onion
2 Tbsp. Low Sodium Soy Sauce
1/2 Tbsp Ground Ginger
1/4 Cup Diced Green Onions
1 Head of Butter Lettuce
8oz Water Chesnuts Drained (optional)
Dipping Sauce Ingredients:
1/4 Cup of Warm Water
2 Tbsp. Granulated Sugar
4 Tsp. Rice Vinegar
3 Tbsp. Low Sodium Soy Sauce
1 Tsp. Chili Garlic Sauce
1/2 Tsp Chinese Hot Mustard
1 Tsp Oyster Sauce
1/2 Tsp Sesame Oil

Instructions:
On medium heat brown your ground chicken with your oil, diced onions, and minced garlic in a skillet until the chicken is fully cooked.
In a small bowl whisk together your hoisin sauce, rice vinegar, soy sauce, and ginger. Pour the sauce over your chicken mixture and evenly cover all of the chicken. Cook for an additional 2 minutes.
Add your water chestnuts (optional) and green onions and cook for another 2 minutes. Season with salt and pepper to taste.
For your dipping sauce. Whisk all of the ingredients together.
Scoop your chicken mixture into your butter lettuce and serve with the dipping sauce.
