Ingredients:
3 cups cold shredded chicken (I just use pre-shredded rotisserie chicken)
1 cup plain Greek yogurt
1 tbsp Dijon mustard
1 tbsp lemon juice
1/4 cup green onion
1/2 cup chopped celery
1 cup chopped cucumber
1 tsp dill weed
1 tsp salt
1/4 tsp pepper
1/4 cup fresh parsley
2 tbsp pickle juice (optional)
Chop up your celery, cucumbers, and green onion.
In a large bowl, mix together the Greek yogurt, mustard, lemon juice, pickle juice and seasonings.
Add remaining ingredients to the bowl and mix well.
Refrigerate and serve on a bun or with crackers and veggies!
