Chicken Stir Fry

4 servings

30 min cook time


Ingredients:

1 lb boneless, skinless chicken breast (I like to buy the stir fry strips and cut them in half)

4-6 cups assorted vegetables (you can buy and cut up fresh vegetables or if you're feeling lazier, you can buy the frozen bags of stir fry veggies)

2 cups rice of your choice (I used minute brown rice)

Salt & pepper, any other seasonings you want for the chicken (creole/Cajun seasoning is my favorite to use for stir fry)


For sauce:

1/4 cup soy sauce

1/4 cup chicken stock

1/2 tbsp corn starch

1/2 tbsp honey

1/2 tsp sesame oil

1/2 tsp rice vinegar

1/4 tsp minced garlic

1/2 tbsp ground or minced ginger


 
  1. Cook rice according to box instructions.

  2. While rice is cooking - In a large skillet pan or Wok (if you have one), cook mixed vegetables over medium heat for 5-7 minutes. It will help if you add a little olive oil to the pan before adding the veggies.

  3. While veggies are cooking, grab another pan and cook chicken over medium heat until done. Season with your choice of seasonings.

  4. Add chicken to mixed vegetables. Turn heat to low.

  5. Combine all sauce ingredients and whisk together.

  6. Once fully mixed, pour sauce over vegetables and chicken.

  7. Service chicken and veggies over rice, sprinkle with sesame seeds (optional).
