If you’re a zucchini lover, here’s a pretty simple lunch or dinner recipe for you.

Ingredients:
3 cups shredded chicken breast or 2 (12.5oz) cans chicken
3 medium zucchini
1 (6oz) box of stovetop stuffing
1 can cream of chicken soup
1/2 cup butter
1/2 cup sour cream
1/2 tsp garlic powder
1/2 tsp Italian seasoning
1/4 tsp salt
1/4 tsp pepper
Preheat oven to 350°
Melt butter in a large bowl and then add half the stuffing and mix.
Dice up zucchini and add to bowl, along with remaining ingredients. Mix to combine everything.
Spread mixture in a 9x13 baking dish and top with remaining stuffing.
Bake at 350° for 35-45 minutes until golden brown and bubbling.
