Creamy Sausage Tortellini Soup / Optional to Use Potatoes

Ingredients:
1lb of Italian Sausage
1lb of Bacon Prepared & Chopped
1 Tbsp of Minced Garlic
1 Chopped Onion
1 Cup of Heavy Whipping Cream
5 Cups of Chicken Broth
1 Tsp of Dried Basil
1 Tsp of Hot Sauce (For Flavor)
1 Tsp of Salt
1/2 Tsp of Oregano
1/2 Tsp of Pepper
1/2 Tsp of Mustard Powder (For Flavor)
1/4 Tsp of Cayenne (optional to add spice)
2 Cups of Chopped Spinach
9 oz of Cooked Tortellini or about 2 Cups (Frozen or Refrigerated Tortellini will work) Or You can use 5-6 Large Russet Potatoes Peeled and Cubed
1 Cup of Parmesan Cheese
Instructions:
In a stock pot add your Italian sausage and chopped onions. Cook over medium-high heat until the sausage is cooked through and the onions are softened. Drain the grease.
Add your minced garlic and cooked chopped bacon and cook for an additional 1 minute.
Add your basil, hot sauce, pepper, salt, oregano, mustard powder, and optional cayenne. Stir to combine.
Add your chicken broth to your pot and slowly stir in your heavy cream. Bring mixture to a boil and then reduce to a simmer. Simmer for about 10 minutes.
While your soup mixture is simmering. Cook your tortellini according to the package directions. Drain the water and set aside. (If you would like to use potatoes instead add your chopped potatoes to the soup mixture and simmer until the potatoes are soft.)
Add your chopped spinach and parmesan cheese to your soup mixture and simmer for an additional 3-5 minutes until the spinach is softened and the cheese is melted.
Let's dish up! Add your tortellini to your bowl. (as much or as little as you would like of the noodles) Then ladle the soup over the noodles. You can top the soup with parmesan cheese if preferred.
(I keep my noodles and my soup separate so the noodles do not get soggy. I store the noodles and soup separately for leftovers as well.)
If you are using potatoes dish up and top with parmesan cheese if preferred.
**For spice you can add Cayenne Pepper to your bowl.
