I never realized how great a combination pasta and soup was until I made this recipe. So creamy and so delicious, especially on those cold winter days!

Ingredients:
1 lb Italian sausage
1 yellow onion
3 large carrots
2 celery stalks
1 cup fresh spinach
1/2 cup flour
2 tsp minced garlic / 2 garlic cloves
5 cups chicken broth
2 cups half & half
12-14 oz three cheese tortellini
1 tsp salt
1/2 tsp pepper
Start by browning sausage on stove over medium heat.
While the sausage is cooking, cut up onion, carrots, and celery.
Once sausage is completely browned, drain grease and set aside.
In a soup or stock pot, drizzle some olive oil and add carrots, celery, and onion. Sauté over medium heat for about 5 minutes or until tender. Add the minced garlic and sauté for another minute or two.
Add the flour and then slowly whisk in the chicken broth.
Let the mixture cook reach a small boil and then turn heat to medium-low and let simmer for 6 minutes.
Add sausage, tortellini, spinach, salt & pepper, half & half. Stir and let simmer for another 5 minutes (until tortellini is fully cooked).
Serve and enjoy!
