Crockpot Chicken Taco Soup

What can I say? These chilly fall days have got me in the soup mood! Lucky for you, soup recipes in the crockpot are super easy!


5 servings

4-6 hour crockpot time


Ingredients:

1 lb grilled chicken breast

2 10.75 oz cans of cream of chicken soup

1 can corn

1 can black beans

1 cup salsa of your choice 1 1/2 cups water

1 tsp cumin

1/2 tsp dried cilantro

1 cup shredded cheddar cheese

1 can green chile’s (if you want to add some spice)

optional toppings: sour cream, avocado, tortilla strips, hot sauce

 
  1. Put chicken breast in bottom of crockpot.

  2. Drain corn and beans.

  3. In a medium bowl, mix all ingredients except shredded cheese and then pour into crockpot over chicken breast.

  4. Cook on high for 4 hours or low for 6 hours.

  5. Take out chicken and shred, then return to crockpot with shredded cheese.

  6. Cook in high for 15 minutes until cheese melts.

  7. Serve with toppings of your choice.
