Crockpot Teriyaki Chicken

This Crockpot Teriyaki Chicken is one of those easy meals you’ll keep coming back to. It’s simple to throw together, cooks while you go about your day, and turns out tender and full of flavor every time. Perfect for busy nights or when you just want something warm and satisfying without a lot of effort.
Servings: 4–6
Prep Time: 10 minutes
Cook Time: 4–5 hours (low) or 2–3 hours (high)
Ingredients:
1 ½ lbs boneless, skinless chicken breasts (or thighs for juicier meat)
2 tsp minced garlic
2 tsp minced fresh ginger (fresh really boosts flavor)
¼ cup honey
3 tbsp brown sugar
½ cup low-sodium soy sauce
2 tsp toasted sesame oil
2 tbsp rice vinegar
1 tbsp cornstarch + 2 tbsp water (optional, for thickening)
Optional Toppings:
Sliced green onions
Sesame seeds
Yum Yum sauce or sriracha mayo
Instructions:
Place chicken breasts in a single layer at the bottom.
In a bowl, whisk together garlic, ginger, honey, brown sugar, soy sauce, sesame oil, and rice vinegar until well combined.
Pour the sauce over the chicken. Cook on low for 4–5 hours or high for 2–3 hours. Every crockpot is different, so keep an eye on it to avoid overcooking and drying out the chicken.
Chicken is done when it reaches 165°F and shreds easily.
Remove chicken, shred with two forks, then return it to the crockpot.
(Optional but recommended) Thicken the sauce
Mix cornstarch + water to make a slurry
Stir into the crockpot
Cook on HIGH for 10–15 minutes until sauce thickens
Serve over white rice, fried rice, or even noodles. Spoon extra sauce over the top.
