Egg Roll in a Bowl

25 min cook time

4-6 servings


Ingredients:

1 lb ground turkey or chicken

1/2 yellow onion

1 cup shredded carrots

3-5 cups shredded cabbage or 1 bag of slaw mix

1/4 cup chicken broth

2 tbsp soy sauce

2 tsp rice vinegar

1 tsp sesame oil

1 tsp minced garlic

1/2 tsp ginger paste

1/2 tsp garlic powder

1/2 tsp onion powder

1/4 tsp pepper

Sesame seeds (optional)


 
  1. Brown the ground turkey/chicken in a pan over medium heat with some olive oil.

  2. Once cooked through, add your onion, garlic, ginger paste, and carrots to the pan. Sauté for 1-2 minutes.

  3. Then add all remaining ingredients (except green onion & sesame seeds.

  4. Stir, cover, turn heat to medium-low, and let simmer for 10-15 minutes until cabbage and carrots are soft and cooked through.

  5. Once done simmering, serve and top with green onion/sesame seeds if you wish.
