I love fried pickles but usually I only eat them when out at a bar or restaurant. Who knew they were so easy to make at home?! And just as good!
Ingredients:
16 oz jar of dill pickle slices
3-4 eggs
1/2 cup flour
2 tsp garlic powder
1 tsp paprika
2 tsp Cajun/creole seasoning (optional for spice)
1 cup bread crumbs (breadcrumbs are the trick; this is what makes the breading crunchy)
Vegetable oil for frying
Fill about 1/3-1/2 of a frying pan with vegetable oil and heat on stove over medium heat (not medium-high because that will be too hot). You want the oil temp to get around 350°
While oil is heating up, take pickles out of jar and pat dry with paper towels.
Crack and whisk eggs in a shallow bowl.
Combine flour, garlic powder, paprika, and Cajun seasonings in a separate bowl. Put breadcrumbs on a separate plate.
Dip each pickle slice in egg, then flour, egg again, then coat in breadcrumbs.
Place 5-7 coated pickles in the oil and fry for 60 seconds, flip them over and fry for another 60 seconds (about 2 mins total). Once they are golden brown, remove from pan and place on a plate with paper towels to soak up the oil.
Repeat this for all battered pickles. You may need to mix up some more flour mixture depending on how many pickles you decide to make.
Once finished, serve pickles with dipping sauce of our choice.
