Light, fluffy, and perfectly sweet, this pistachio dessert salad is the ultimate crowd-pleaser. With creamy pudding, juicy pineapple, and little bites of marshmallow, it’s a nostalgic treat that disappears fast at any gathering.

Ingredients:

2 (3.4 oz) boxes instant pistachio pudding mix

1 (20 oz) can crushed pineapple, drained

16 oz thawed Cool Whip (or whipped topping)

1 (10 oz) bag mini marshmallows

Optional: chopped pecans or pistachios for garnish


Instructions

In a large mixing bowl, combine the pistachio pudding mix with the drained crushed pineapple. Stir until the pudding is fully incorporated into the pineapple juice.


Gently fold in the Cool Whip and mini marshmallows until the mixture is smooth and fluffy. Be careful not to overmix so the marshmallows keep their texture.


Cover the bowl with plastic wrap and refrigerate overnight. This allows the flavors to meld and the marshmallows to soften slightly, creating a creamy, dreamy texture.


Before serving, give it a gentle stir. Optional: sprinkle with chopped pecans or pistachios for added crunch and visual appeal. Serve chilled.
