Rachelle's Creamy Italian Pasta Salad

This Italian Pasta Salad is creamy, colorful, and packed with flavor, truly a crowd favorite! Perfect for potlucks, picnics, or any family gathering.
Servings: 8–10
Prep Time: 15 minutes
Chill Time: 2+ hours (overnight recommended)
Ingredients:
2 cups mayonnaise
2 tablespoons garlic (minced or powdered)
1 (12 oz) box tri-colored corkscrew pasta
1 cup grape tomatoes, halved
1/2 cup sliced black olives
12 oz cubed cheese (Colby Jack & Pepper Jack mix recommended)
1/4 cup red wine vinegar
2 teaspoons Italian seasoning
1/2 teaspoon black pepper
2 teaspoons salt
1 (6 oz) pack of pepperoni slices, cut into quarters
Optional: chopped fresh parsley for garnish
Instructions:
Cook the Pasta: Prepare the pasta according to package instructions. Drain and rinse with cold water to cool. Set aside.
Make the Dressing: In a large bowl, whisk together mayonnaise, red wine vinegar, garlic, Italian seasoning, salt, and pepper until smooth.
Combine Ingredients: Add the cooled pasta, grape tomatoes, olives, cubed cheese, and pepperoni to the dressing. Toss gently until everything is evenly coated.
Chill: Cover and refrigerate for at least 2 hours, ideally overnight, to allow flavors to meld.
Finish & Serve: Before serving, stir in a little extra mayonnaise for extra creaminess, if desired. Garnish with fresh parsley for a pop of color.
